Ingredients

  • 30 ml Gold Jamaican Rum
  • 15 ml Cuban Rum
  • 15 ml Passion Fruit Syrup
  • 15 ml Fresh lime juice
  • 15 ml Honey Syrup
  • Crushed ice to blend and top up

Garnish: 1/2 fresh passion fruit on top

The Don’s Special Daiquiri is a lush, tropical evolution of the classic Daiquiri, officially recognized by the IBA (International Bartenders Association). Instead of staying purely citrusy and dry, this riff dives into exotic territory with passion fruit and honey, layered over a blend of Jamaican and Cuban rums.

Blended with crushed ice, it drinks more like a refined tiki slush than a sharp sour. The bold, funky notes of gold Jamaican rum meet the clean backbone of Cuban rum, while passion fruit syrup and honey syrup soften the edges and add rich, fruity complexity.

It is an excellent choice for drinkers who enjoy classic sour-style cocktails but want a more indulgent, tropical profile. Elegant enough for a cocktail bar, yet approachable for home bartenders, it bridges the gap between Daiquiri simplicity and tiki-style extravagance.

Instructions

Official Recipe:

  1. Chill your cocktail glass in the freezer or by filling it with ice and water while you prepare the drink.
  2. Measure 30 ml gold Jamaican rum, 15 ml Cuban rum, 15 ml passion fruit syrup, 15 ml fresh lime juice, and 15 ml honey syrup into a blender or milkshake mixer cup.
  3. Add a generous scoop of crushed ice to the blender, enough to fill the cup but leaving some space for blending.
  4. Blend for a few seconds until the mixture is smooth, thick, and slushy, with no large ice chunks remaining.
  5. Discard the ice and water from your chilled cocktail glass, if used, and quickly dry the inside.
  6. Strain/Pour the blended mixture into the chilled cocktail glass, allowing it to mound slightly above the rim if the texture is thick.
  7. Top with a little extra crushed ice if needed to create an appealing dome.
  8. Garnish with 1/2 fresh passion fruit placed on top of the ice, cut side up.

Note: Adjust the amount of crushed ice slightly if the drink seems too thin (add more ice) or too thick (blend with a splash of water or extra lime juice).

Tips

  • Use quality rum: Choose a characterful gold Jamaican rum with some funk and esters; it gives the drink its depth, while the Cuban rum keeps the profile balanced and smooth.
  • Fresh lime is non‑negotiable: Bottled lime juice will flatten the cocktail. Always use freshly squeezed lime juice, strained to remove pulp for a cleaner texture.
  • Honey syrup ratio: Prepare honey syrup by mixing equal parts honey and warm water (1:1). This ensures it integrates smoothly without clumping when blended with cold ingredients.
  • Control dilution with ice: Crushed ice melts quickly. Start with less, blend, and add more if needed to reach a thick but sippable slushy consistency.
  • Chill everything: A pre-chilled glass and cold ingredients help the drink stay frosty longer and prevent rapid dilution.
  • Balance sweetness and acidity: If your passion fruit syrup is very sweet, you can slightly increase the lime juice (up to 20 ml) to keep the cocktail bright and refreshing.
  • Garnish with aroma: Lightly tapping the passion fruit shell before placing it on the drink releases more tropical aroma with every sip.

Classic Variations

  • Classic Daiquiri: White rum, fresh lime juice, and sugar syrup shaken and strained into a cocktail glass; drier and more citrus-forward than Don’s Special.
  • Frozen Strawberry Daiquiri: White rum blended with lime juice, sugar, strawberries, and crushed ice for a fruity, dessert-like twist.
  • Hemingway Daiquiri: White rum, lime juice, grapefruit juice, and maraschino liqueur; tarter and more complex, without the tropical sweetness of passion fruit.
  • Passion Fruit Daiquiri: White rum shaken with lime, passion fruit puree or syrup, and sugar, served up; similar flavor direction but without honey or tiki-style blending.
  • Honey Daiquiri: Rum, lime, and honey syrup shaken; keeps the honey element but omits passion fruit and blended texture.

Flavor Profile

On the first sip, bright lime and intense passion fruit leap forward, supported by a cool, slushy texture. The drink feels plush yet refreshing, with immediate tropical aromatics from the garnish.

On the mid-palate, the interplay between the funky gold Jamaican rum and the lighter Cuban rum appears, bringing notes of ripe banana, molasses, and light oak. Honey syrup rounds everything out with a silky, floral sweetness.

The finish is long and tropical, with lingering passion fruit and honey, plus a gentle warmth from the rum. Despite its richness, the acidity of the lime keeps the aftertaste clean and invites another sip.

History

Don’s Special Daiquiri is listed by the International Bartenders Association (IBA) in its New Era Drinks category, acknowledging it as a contemporary yet influential take on the classic Daiquiri template. While it is inspired by the long tradition of rum sours, its exact origin is connected to the modern resurgence of tiki and tropical cocktails.

The “Don” in the name evokes the legacy of legendary tiki pioneer Donn Beach (Don the Beachcomber), whose experiments with blended rum drinks shaped mid‑20th‑century cocktail culture. Though Don’s Special Daiquiri as codified by the IBA is a modern recipe rather than a strict historical original, it clearly pays homage to that golden age of exotic rum cocktails.

By marrying the straightforward structure of the Daiquiri with tiki-style blending, layered rums, and lush tropical flavors, Don’s Special Daiquiri has secured a place as a go‑to modern classic. It demonstrates how a simple sour can evolve into a crowd‑pleasing blended drink without losing its balance or integrity.

Cheers!
